Hello and Happy Friday!
This week flew by. Once again, we were at the doctor’s office a few times this week. The good news is that Chris was cleared to drive! I will still drive us places we go together for a few more weeks, but Chris can drive himself to the doctor now, which means I will be going back to work on Monday. I’m definitely having some mixed emotions about that. Another piece of good news is that Chris has been taken off some of his post-transplant medication. I mentioned a few weeks ago that Chris will need to be on anti-rejection medicine for the life of his kidney, but the amount of additional medications will decrease over time. Some of that is already happening so that’s a positive!
A part of our new routine is to get all of Chris’ medicine ready at the beginning of the week.
It looks like a lot and it is, but it’s a part of our new post-transplant normal! And we are so happy to be in this place of living our new normal. We are also happy to be enjoying some foods that we couldn’t eat before Chris’ transplant. He is no longer on a renal diet, but he does have to follow a low sodium and low fat diet, which is very easy compared to the strict diet he was on before! It’s not easy to find approved foods when you’re on a low sodium, low potassium, and low phosphorous diet. All of that being said, we haven’t gone crazy with our food choices. We have not been as strict as we were before Chris’ kidney transplant, but it makes us feel better to not eat a ton of foods that we know are hard on the kidneys. We want to do everything possible to keep his new kidney in good working order!
One day earlier in the week, I was feeling a little… um… lazy and I could just tell I wasn’t going to want to cook dinner later that night. But going out to eat or ordering in weren’t good options. One: Chris still cannot be out in public, so going to a restaurant is a no-go. Two: Ordering in typically means meals prepared with a lot of salt and other things that may or may not be healthy for us. So I decided to bust out my crockpot and make a healthy, hassle-free dinner at home. If you’ve been reading my blog regularly, you know that I am a huge fan of my crockpot. I have posted a few crockpot recipes HERE and HERE.
I browsed Pinterest for simple pork chops recipe ideas and stumbled across THIS one. It’s made with bone-in pork chops and I had boneless pork chops so I had to make a few adjustments. Below is the recipe I came up with:
Crockpot Lemon Pepper Pork Chops
Ingredients
- 2 boneless pork chops
- 1 Tablespoon Lemon Pepper seasoning (I used Mrs. Dash salt-free lemon pepper seasoning)
- 1/2 Tablespoon Minced Onion
- 1/2 Cup Lemon Juice
Preparation
- Place pork chops in the bottom of crockpot (I use slow cooker liners to save time on cleanup)
- Sprinkle pork chops with minced onion and lemon pepper seasoning
- Pour lemon juice in the crockpot around the pork chops
- Cook on low 4-6 hours
The pork chops turned out really good! They are even husband approved, Chris really liked them! I didn’t tell him they were my recipe until after I asked what he thought of dinner, so I know I got an honest answer. I served them with lemon rice and my favorite roasted cauliflower.
