Hi, my name is Amanda!
I live in Dallas, Texas with my husband, Chris, our three children, and our two dogs. Our identical twin girls are 4.5 years old and our son is 2.5 years old. Yes, we live in a zoo. Or it sure feels that way at times!
The last 5 years of my life have been defined by trying to become a mom (read about our IVF journey HERE) and navigating new motherhood, infant years, and toddler years. It’s easy to lose yourself in motherhood and I know I have at times, but recently I’ve been remembering and rediscovering who I am. I love to travel and explore new places. I am a total numbers person and I’m a little over-the-top about budgeting. I try to live a healthy lifestyle. I absolutely love my family!

It also turns out I LOVE to cook! I cook the majority of our meals and we eat at home most every day of the week. I get asked all the time how I’m able to cook with 3 little kids running around and my answer is always: meal planning! I plan our meals a week at a time and go grocery shopping so I already have the ingredients I need to make breakfast, lunch, and dinner throughout the week. It has become a non-negotiable for me and is the inspiration for my new and improved blog!
In this blog I will be sharing weekly meal plans I’m personally using and I’ll report back on what we thought of the meals. Whether they were time consuming, easy or hard to make, and the most important part: if they actually tasted good and the whole family ate them! Busy moms don’t have time to make food their children aren’t actually going to eat, right?
