Happy Tuesday!
I meant to write this post Sunday night and publish it yesterday, but… Chris and I were snuggled up on the couch Sunday night watching TV together and I just couldn’t pull myself away. Gosh, I love that man. One perk of his kidney transplant (other than the obvious) is that we have gotten to spend so much time together the past few weeks! And I have loved every minute of it.
Anywho, I figured I would recap our weekend since I actually got out of the house and did a few things. Poor Chris, he needs to stay away from the public for a few more weeks, but soon enough he will be able to leave the house too.
Friday I made a bunch of cake balls/truffles for a bake sale Chris’ work is having. I seriously love where he works, it is such a family environment and everyone rallies when someone is going through a hard time. They have supported us so much through Chris’ treatments, surgery, and recovery. Even though we couldn’t attend, the least we could do is support the bake sale that’s raising money for someone at his work. So I made a bunch of cake balls! They turned out pretty good if I do say so myself! Chris was my taste tester and he agreed. Of course we had to try a few before we sent them off to the bake sale.
I used these recipes:
White Chocolate Oreo Cake Balls
Pumpkin Spice Cake Balls (I altered this one a bit and used cream cheese instead of frosting)
I wish I had taken better pictures of them before I bagged them up but oops… I forgot. I guess I got caught up in taste testing. If you have any kind of event you need to make a dessert for all 3 of these recipes were delicious! They were a little time consuming but totally worth it.
I got some cuddle time with the pups Friday night. A cold front came through Dallas and it was in the 30’s overnight, so we were keeping each other warm. I love these dogs so much!
Saturday I drove to Fort Worth for my friend Melinda’s baby shower! I didn’t take any pictures, which was a total fail, but we had a great time. Mel got lots of goodies and I’m sure they will be put to good use when her two little girls arrive! We did manage to get a good group picture that I stole from my friend Brooke. Thanks Brooke!
While I was in the area, I met up with some family for lunch. I was so excited to see my niece Peyton! She is almost 15 months old and she is so adorable. She’s a walking machine now and all she wanted to do was walk around the restaurant and look at their Halloween decorations. It is so much fun watching her grow up and I’m so glad I got to spend time with her over the weekend.
Saturday night was a lazy night at home and I’m not complaining. I was tired from running around all day.
Sunday was a pretty normal Sunday for us. I did laundry and meal prepped, which is always exciting. Since I went back to work yesterday, I had to prepare all my food for the week. Getting back in my routine!
I also hung up all of our office decor that’s been sitting on the floor since we redid our home office a few months ago. Now our diplomas are proudly displayed above our desks. Hey, we worked hard for those, we should show them off!
Sunday night I cooked steaks using THIS recipe and they turned out really good!
I served them with mashed sweet potatoes and green beans. It was tasty!
We had a great weekend and I’m sad it’s already over and the work week has begun. I’ve been spoiled the past several weeks getting to work remotely while Chris recovered, but it couldn’t last forever, and it’s time to get back in the swing of things.
