Happy Monday!
How is it already August? This year is flying by. I feel like I say that all the time, but it’s true! I’m not sure how we are already a week into August. Sometimes I want time to slow down and other times I want it to speed up. Funny how that works, huh?
Anyways, since last week’s Monday Meal Plan was a hit, I figured I would continue the series and share another meal plan today! Once again I sat down last weekend and planned out all of our food in advance for the week ahead. Meal planning really does make a huge difference for us. We eat mostly healthy meals at home and Chris and I both feel a difference in our bodies when we are eating well. And I have to say, last week’s meal plan was a hit!
This was our menu:
- Monday: Stuffed Shells with Caesar Salad
These were delicious! The only change I made was not including spinach in the filling, which was a total fail on my part. We even had spinach in the fridge! I just totally forgot to use it. Whoops. This recipe was delicious without it, although slightly less healthy, but what can you do? This recipe was a win for sure.
- Tuesday: Sriracha Chicken Quinoa Bowl
If you like spice, this is the recipe for you! I used half the amount of sriracha the recipe called for and our mouths were still on fire. We had quinoa and roasted broccoli on the side and it was tasty!
- Wednesday: We picked up dinner. I had originally planned for Friday to be our night out last week, but I was so tired on Wednesday we had to change plans. I was literally struggling to drive home after work I was so tired, so we picked up Thai food for dinner that night. It hit the spot and I fell asleep super early on the couch, which was just what I needed.
I have been obsessed with my spiralizer lately. In case you’re wondering, I have THIS one and I love it! This spiralizer sweet potato enchilada skillet sounded really good and I was excited to try it. I added ground turkey and the recipe turned out delicious! We had plenty for leftovers and Chris and I both loved this one. We will definitely be making it again!
- Friday: Grilled Honey Mustard Chicken
Our Friday night dinner was all cooked on the grill. I marinaded the chicken all day and we had corn on the cob, grilled broccoli, and garlic bread to go along with the chicken. It was so good! The chicken breasts were huge (as you can see in the picture) so we had leftovers from this dinner too. Chris and I both loved the honey mustard marinade and we will definitely be using it again. So good!
All in all, our dinners last week were great! They were all easy, quick meals which I love, and they tasted good too! I have already planned out our meals for this week and I’m hoping they will be equally delicious. We shall see!
