Happy Monday! Ugh just kidding… I’m sad the weekend is over. How is it already Monday?
Here’s a fun fact about me: I LOVE Tex-Mex! It’s probably an unhealthy obsession actually, I think I could eat some version of Tex-Mex/Mexican food every day of the week. That’s how much I love it. If I’m ever going out to eat with family or friends, they know that if they ask me to choose the restaurant it will definitely be a Mexican restaurant.When I lived in California, I had serious withdrawals because there was never queso at the Mexican restaurants there, which is a staple of Tex-Mex cuisine. I guess it makes sense California Mexican food and Texas Mexican food (Tex-Mex) would be different, but I am so happy to be back in Texas and have access to queso on a regular basis again. Since I love Tex-Mex so much, it makes a regular appearance on our dinner menu. At least once a week. Thankfully I have a laid-back husband that eats whatever I cook and never complains about how often some version of Tex-Mex shows up on his dinner plate.
As I mentioned last week I love my crockpot. I haven’t been using it much recently but last week I was on a total crockpot kick. I planned 3 crockpot meals for dinner during the week. A little over the top? Maybe… And I’m sure this is going to be shocking but one of those meals I had planned was Tex-Mex. Crockpot taquitos to be exact. But, wouldn’t you know it, my crockpot decided to stop working after my 2nd crockpot meal of the week. So not only do I have to buy a new crockpot now, I was also S.O.L. on the crockpot taquitos I had planned to make Thursday night. How do you make a crockpot meal without a crockpot? I had to improvise.
I had planned to make THIS recipe but that was out the window after my crockpot stopped working. So I came up with my own recipe, based off the one I had originally planned to make.
Ingredients
- Flour tortillas
- Shredded chicken
- 8 oz cream cheese
- ¼ cup sour cream
- 3 Tablespoons taco seasoning (I used salt-free since my husband is on a low sodium diet)
- 1 cup cheddar cheese (or any cheese you want)
Preparation
- Prepare shredded chicken. I baked two chicken breasts (seasoned with olive oil and pepper) in the oven at 350 degrees for 35 minutes until they were cooked through. You could also use rotisserie chicken if you prefer.
Helpful hint: you can use a hand mixer to easily shred the baked chicken. I had heard of this tip before but never tried it out until now. Turns out it works like a charm!
- To the shredded chicken, add cream cheese, sour cream, taco seasoning, and cheddar cheese. Mix well.
- Line a baking sheet with foil and spray with non-stick spray.
- Scoop a large spoonful of the chicken and cheese mixture into a tortilla. Roll the tortilla up and place seam side down on the baking sheet.
- Continue with remaining tortillas and chicken/cheese mixture.
- Spray the taquitos with olive oil/butter spray.
- Bake at 400 degrees for 20 minutes.
- Serve with toppings of your choice. Some suggestions are sour cream, guacamole, salsa, or pico de gallo.
I think Levi would approve of these cheesy chicken taquitos if he was allowed to eat people food!
These taquitos were delicious and definitely won a spot in my Tex-Mex loving heart. The only thing missing was a giant bowl of queso to go with them. Next time!

All my American friends in London would complain about the lack of decent mexican food. you would only survive by making lots of things like this yourself!!

Oh wow, yeah I would probably have a hard time living in London! I definitely want to visit, but I’m not sure I could live there if there’s no decent Mexican food haha. Glad you like the picture of Levi, he is quite the character!
