How has another weekend come and gone? Two days is not enough time off work if you ask me. Although it went by too fast like always, Chris and I had a great weekend together! Friday night we relaxed at home, which I think the dogs enjoyed, especially Lyssa. She got lots of cuddle time.
Saturday night we went to a boxing tournament. It was put on by the Guns & Hoses Foundation of North Texas which is a non-profit that provides financial assistance to the families of first responders that have fallen in the line of duty. It was such a fun event! We had a great time watching firefighters and police officers duke it out in the boxing ring.
We stayed out later than we have in a long time, so Chris and I were a little tired on Sunday. We spent the day relaxing at home and it was much needed. I also meal prepped for the week, which is something I do every Sunday. Work has been super busy for me lately. We just wrapped up budgeting and I have a lot of projects, so it’s really important that I have food at the office with me, since I am rarely able to leave for lunch. My favorite kind of office lunch is what I call a “bowl lunch”. Everything fits in a bowl (or tupperware container) and it’s microwaved for a quick 1 – 2 minutes, then lunch is ready and I take it back to my desk. They are super convenient and perfect for the office. I know I can’t be the only one who needs “bowl” ideas for lunch, so I figured today I would do a bit of a recipe round-up and post several easy work lunch ideas.
Buffalo Chicken Bowls
Up first is one of my personal favorites: Buffalo Chicken Bowls. If you like a little spice in your meals, this is definitely a lunch you should try. It’s very easy to prepare ahead of time and it heats up really well. Perfect for the office.
Ingredients
Chicken
Ranch Seasoning Mix
Frank’s Red Hot Sauce/Buffalo Sauce
Rice
Red Onion (or other vegetable)
Shredded Mozzarella Cheese (optional)
Ranch Dressing (store bought or homemade)
Preparation
- I follow THIS recipe to make the buffalo chicken, although I usually substitute the original Frank’s Red Hot Sauce instead of Buffalo Style. I have made it both ways though! It is so easy and simple and since it cooks in the crockpot, you can go about your other meal prep while it’s cooking.
- Prepare rice.
- Dice red onion. You can omit this if you aren’t an onion fan or add another vegetable. I’ve had this bowl with roasted broccoli and it was really good, so that’s another option.
- When chicken is finished cooking, assemble the bowls. I put rice in the bottom, top it with red onion, some mozzarella cheese (optional), and cooked buffalo chicken.
- I also make my own Ranch dressing by following THIS recipe. You can make your own or use store bought Ranch dressing, but I definitely recommend it to tone down the spice a little bit. I take the Ranch to work in a separate container and top the buffalo chicken bowl with it when I am ready to eat.
“Chipotle” Burrito Bowls
I posted this recipe a few weeks ago (you can read it HERE) and it’s perfect for an office lunch. In fact, this is what I made to take to work this week. I am definitely a creature of habit, but it really is that good. Super simple to make on Sundays and it has everything you need in a meal: carbs, veggies, protein. I highly recommend this one!
Cheeseburger Salad
I found THIS recipe on Pinterest and I’ve made it for lunch several times. It is delicious! Really, it’s so good. I’ve even turned some of my friends onto this recipe. The only thing that makes this not totally a “bowl” recipe is that I usually heat up the hamburger meat by itself and then add it to the already prepared salad. But I know some people eat it cold, so however you prefer!
Pizza Salad
I found THIS recipe on the Beachbody website and I’ve made it many times also. Even though the recipe is called Vegetarian Pizza Salad, there are lots of ways to change it up and add some protein. You could add pepperoni or Canadian bacon or sausage. Anything that you would put on a pizza really. So many options! You definitely have to try this one!
