They say you should marry someone who makes you better and challenges you to try new and different things. Chris is definitely that person for me. He makes me better in many ways and he definitely challenges and inspires me to try new things. (If you enjoy this blog, Chris is the person to thank. I would have never started it without his encouragement). One of the other things he has inspired me to try is food. I have always been pretty adventurous with my eating habits and I will try anything once. But that’s the key word: once. If I try it and don’t like it, I will typically avoid that food item for… possibly forever. Seafood happens to be one of those foods that I have not been a big fan of. On our first date I mentioned to Chris that I had tried sushi once and didn’t really like it, so I hadn’t eaten it since. Well guess what we did on our second date? Went out for sushi. He asked me ahead of time if I was ok with it and I said yes and we had a great time. Chris ordered some mellow sushi rolls for us to try and I was surprised that I actually liked them. Over the years I have branched out and tried many sushi rolls and enjoyed most of them! We go out for sushi somewhat often and that is all thanks to Chris.
Along with sushi, another food item I was not a giant fan of is salmon. Truth be told, I never really ate salmon until I met Chris. I had tried it a few times and didn’t particularly like it. But when I met Chris, that changed because he loves salmon. He can be counted on to order salmon at about 75% of the restaurants we go to. Chris said he was going to convert me and he actually did. How did he convert me? By making his “secret” salmon recipe for me many times over the last six and a half years. The secret is grilling the salmon and topping it with lots of butter and seasoning salt. It takes out a lot of the fishiness which is the part I don’t like. As time went on I grew to actually like salmon and now I eat salmon occasionally instead of never.
All of that being said, Chris is not doing much cooking or grilling at the moment (you can read why here). So I decided to bring his favorite food to him in a new form: salmon burgers. Just as he inspires me to try new things, I also inspire him. Chris prefers to eat salmon grilled and in fillet form. Even though he loves salmon, he wasn’t quite sure of the salmon burgers concept. But he trusted me and in the end gave his seal of approval for this recipe.
Honey Lime Salmon Burgers
Ingredients
- 1/2 TBS Coconut Oil
- Burger Buns
- For the Salmon Burgers:
- 6 oz Canned Salmon, Drained
- 1/4 Cup Panko Bread Crumbs
- 1 Egg
- 1/2 tsp Ground Ginger (can use up to 1 tsp if you prefer)
- For the Honey/Lime Glaze
- 1/2 tsp Honey
- Juice of 1/2 Lime
- For The Sauce
- 1/4 Cup Sour Cream
- Zest of 1 Lime
- Juice of 1/2 Lime
- 1/2 tsp Ground Ginger
Preparation
- Combine salmon, egg, ground ginger, and panko in a bowl. Mix well and form two patties.
- Combine the sour cream, lime zest, juice of 1/2 lime, and ground ginger to make the sauce. Stir well.
- Combine the honey and juice of 1/2 lime to make the glaze.
- Heat coconut oil in a pan over medium heat. Once hot, add the salmon patties. Cook for 4-5 minutes on the first side and flip. Cook for 4 minutes on the other side.
- Glaze the top of the salmon patties with the honey/lime mixture. Let cook for an additional 30 seconds – 1 minute. Remove from heat.
- Add the burger buns to the pan face down for a few minutes until they are toasted. Remove from heat.
- Top the toasted burger buns with a salmon patty and sour cream sauce.
I have also made this in slider form and it is delicious. The only change necessary is to make 4 small salmon patties instead of 2 and put them on slider buns.
