I cannot believe it’s April 5th and we’ve already celebrated Easter. It was so early this year! Did that throw anyone else off or just me?
Easter totally snuck up on me this year because it was so early. Usually I figure out holiday menus 2-3 weeks in advance, but not this time. When I put my grocery order in last week, I realized I did not have a plan for Easter, so I had to figure out something pretty quickly. Today I am sharing the easy Easter meal plan I came up with!
All of these recipes require minimal effort and ingredients and are perfect for a low-stress holiday meal!
Smoked Deviled Eggs
I like to have a fun appetizer on holidays and this year I decided to try a smoked appetizer, since I knew we would be smoking a ham (more on that next). A friend of mine recently told me she made smoked deviled eggs and they were amazing, so that’s what inspired me to choose THIS recipe for our appetizer.
They did not disappoint! The smoked deviled eggs were very easy to make and can be made ahead of time if need be. I have to say, I was expecting a little bit more of a smoky flavor so I think next time we’ll smoke them for longer and use a smoke tube. But overall, we all really loved this appetizer, including my kids, so we would definitely make them again!
Smoked Ham
We got a smoker last summer and absolutely love it! My husband and I are always looking for new things to smoke and we haven’t smoked a ham yet, so we figured Easter was the perfect time. We decided to try Hey Grill Hey’s Smoked Ham.
Our Easter ham turned out so good! The picture doesn’t do it justice. The only change we made to her recipe was to use Meat Church Honey Hog seasoning because we already had that on hand. I used 1 cup of apricot preserves and 1 cup of Sweet Baby Ray’s Barbecue Sauce for the glaze. It was easy and delicious! Perfect for any holiday. You should definitely give this recipe a try if you have a smoker!
Instant Pot Parmesan Risotto
I’ve actually made THIS recipe for Instant Pot Parmesan Risotto before and it is so good and so easy. Making traditional risotto is a labor of love and I like to enjoy holidays with my family and not spend the whole day in the kitchen. This recipe is a bit fancy without all of the work, so it is perfect for Easter!
Speaking of spending time with family, I got distracted chatting on Easter and did not get a picture of this recipe. You’ll have to take my word for it that it’s an easy and delicious holiday side dish!
Slow Cooker Cheddar Corn
Again, I like to spend holidays in the company of my family, so I use kitchen appliances to my full advantage and THIS recipe is another example of that. This Slow Cooker Cheddar Corn only needs four hours to cook and it only requires a few ingredients. I threw everything into the crockpot around noon and it was ready in time for Easter dinner. This recipe was better than I expected and I would definitely make it again.
Bread
You have to make bread for Easter right? I don’t have a particular recipe for this one because it is a combination of a couple different recipes I’ve tried over the years. I’ve actually nicknamed it Chris’ Favorite Focaccia because my husband loves this bread so much he requests it for every holiday and special occasion, which I take as a compliment! It is super easy to make. I use my breadmaker to make the dough and then I form it and bake it in the oven in a cast iron pan. It turns out great every time!

Dessert
I decided not to make a dessert on Easter because I knew we’d have an egg hunt with our kids and they would end up with plenty of candy and chocolates. Instead, I decided to make Resurrection Rolls on Good Friday so we could talk to our kids about the true meaning of Easter. It worked out perfectly. We had a fun “dessert” to start the weekend off and no one was overloaded with sugar on Easter.
