Happy Monday! I know I say this every week, but how is it Monday already? The weekends always go by so fast.
We had a great weekend! Friday night Chris and I relaxed at home and went to bed early, which was amazing. I’m pretty sure we were cuddled up with the dogs and asleep before 9:30 pm. Clearly our party days are over.
Saturday morning we were super productive. We took the dogs to a local low cost vaccination clinic because Levi was due for his yearly shots and both dogs needed heart worm and flea preventative. I plan to write a post at some point about how we save money on pet expenses but going to low cost vet clinics is one of the ways. After we finished up there, I went to Sams and the grocery store to stock up on groceries for the afternoon. My closest friends (and their husbands) came over to help prep a bunch of freezer meals. I am going to share all of the details in a future post but we accomplished so much! My friends are seriously the best! I am so lucky and thankful to have them in my life.
After we finished making freezer meals, we had a group dinner. It was a fun and productive Saturday with great friends!
Sunday was a relaxing day at home. Chris and I did some chores around the house such as laundry and watering flowers. I also meal prepped and planned out our dinner menu for the week. I am always looking for quick and delicious dinner ideas that don’t require a ton of time or ingredients. Last week our dinner menu was spot on! If I do say so myself. All of the recipes took less than 30 minutes to prepare and Chris and I enjoyed all of them! So I figured I would share the recipes in case any of you are looking for some new dinner ideas!
Monday:
I’ve mentioned that Chris is on a strict diet and because of that he is only allowed to eat out for one meal a week. We call this our “cheat meal.” So Monday night we went out for Hibachi, which is Chris’ favorite. It was definitely not on the diet but we enjoyed every bite and got back to approved meals on Tuesday!
Tuesday:
I first made these taco sliders a few months ago when we had friends over. It looked easy and I figured it would be a crowd pleaser. Which it was! Since then this recipe has made a regular appearance on our dinner menu. I make the taco seasoning at home so I can exclude the salt and make it a kidney friendly meal. But for anyone not on a low sodium diet, you can use the store bought seasoning packet to save yourself some time. You seriously have to try this one. It’s delicious!
Wednesday:
I found this recipe on Pinterest and made it for the first time last week. Oh my gosh, it was SO good! It was super easy too. It took me all of 5 minutes to get the pork chops ready and then they cooked in the oven. The recipe could not have been simpler. We had corn, salad, and bread on the side and this dinner was seriously a winner!
Thursday
I’ve made this recipe several times over the past few months and it is delicious! Especially if you like your food to have a little kick. The shrimp are cooked in Cajun seasoning, which you can buy pre-made or make yourself. Whatever you choose, you should definitely add this one into your recipe rotation! It took 10 minutes to make and it’s husband approved.
Friday
This was my first time making this pork chop recipe and the picture does not do it justice. They are really good and it was another quick and easy dinner! It took me about 5 minutes to prepare the pork chops then they baked in the oven. I discovered this recipe for Roasted Mustard Cauliflower a few months ago and it is SO good. It’s my new favorite way to make cauliflower and I make it at least once a week. It paired great with the pesto parmesan pork chops and we will definitely be eating this dinner again!
If you’re looking for some new recipes to add into your dinner rotation, you should definitely give some (or all of these) a try! They all took 30 minutes or less to prepare and are super delicious. I highly recommend them!
