I went through a phase (if several years is a phase) where I was totally obsessed with my crockpot. I used it every week, sometimes multiple times a week. It became my favorite kitchen tool and is probably still in my top 5. It’s just so convenient. Especially when you’re trying to prepare 4-5 meals in one day. When Chris worked several hours from home (read about it HERE) I used to make dinners for the week for Chris to take with him. It was so much better than him eating out all week and more cost effective too. I got into a good routine of using the crockpot to make a big meal (that would actually last several meals) and it really helped simplify my meal prep routine during that time.
Over the past few months I haven’t used my crockpot as much. I’m not sure why, I can’t think of a specific reason. But last week Chris and I had evening plans after work and I knew we would be home later than usual so I needed a quick dinner idea. That’s when I decided to bust out my crockpot and let dinner cook itself.
Remember how I told you that Chris has inspired me to try new food items? And it’s turns out I actually kind of like them. Well, I have done the same for him! Chris absolutely hated mustard when we first started dating. Like hated the stuff and would not touch it. I’m not going to go so far as to say that he did a 180 and loves mustard now, but he is eating some mustard dishes. And he typically likes them. Imagine that!
When I randomly decided Monday morning before work to make a crockpot meal for dinner, I knew it had to be simple. I was getting ready for work so I didn’t have much time and I hadn’t planned properly to get any special ingredients. I had to work with what we had on hand. And guess what one of those items was? Mustard! Hence the name of this recipe: Easy Crockpot Mustard Pork Chops. These are super simple and delicious. They are also husband approved which is always a win! You could make this recipe with chicken too and serve it with any side dish really. You can easily double this recipe as well. There are only two of us so I made a smaller quantity.
Ingredients
- 2-3 Pork Chops
- ½ cup of chicken broth (unsalted if you’re on a restricted diet like my husband)
- 1/8 cup of Dijon mustard
- 1/8 cup of Stone Ground mustard
- ½ tsp minced garlic
- ½ tsp dried thyme
- ¼ tsp black pepper
Preparation
- Place pork chops in the bottom of the crockpot
- Combine chicken broth, mustard, minced garlic, thyme, and black pepper in a bowl.
- Pour mustard sauce over the pork chops.
- Cook on low for 6 hours (adjust as necessary)
*Clean up tip: I always use slow cooker liners when I make crockpot meals and I highly recommend them! Makes clean up so much easier*
Serve with your favorite side dish and ta-da! Super easy weeknight dinner.
