Happy Wednesday!
We are halfway through the week and I am happy to say that so far it’s going by pretty quickly. Hopefully that trend will continue and it will be Friday before we know it. Knock on wood!
Today I’m resuming my 30 Days of Gratitude challenge! As I mentioned in my post last week, I am turning this into a weekly series. I think this is the perfect time of year to reflect on all of the positives in my life and all of the things I have to be grateful for. No matter how small they are. It’s so easy to get caught up in the day-to-day craziness of life that we forget to take a look at the world around us. This challenge is forcing me to stop and smell the roses and I love it!
Without further ado…
Day 8: What book are you most grateful for?
“The Complete Guide to Money” by Dave Ramsey. I wrote a blog post a few weeks ago (you can read it HERE) about the financial journey Chris and I have been on since the beginning of the year. The Financial Peace University class we took came with Dave Ramsey’s book and it has truly impacted our life. It led to this beautiful piece of paper I received in the mail last week.
It really feels amazing to not have a car payment. I highly recommend this book!
Day 9: What place are you most grateful for?
Our home. Not only do I love our house, but it represents a lot for me and Chris. We dreamed of owning a home for a long time and last year we were finally able to make it happen. It’s the perfect house for us. We love it and we are so proud!
Day 10: What taste are you grateful for today?
Tex Mex! It’s no secret how much I LOVE Tex-Mex. I think I could eat it every day and not get tired of it. Tonight’s dinner was enchilada rice and it was delicious!
I forgot to take a picture but here’s where I found the recipe: Enchilada Rice
Day 11: What holiday are you grateful for?
I really love Thanksgiving. I’ve always loved it and especially after my experience hosting my first Thanksgiving this year, I am even more grateful for this holiday. The main reason I’m so grateful is because I enjoy some quiet time every year to reflect on everything that’s happened since the previous Thanksgiving and all of the things I have to be thankful for. I always feel extra hopeful during this holiday.
The delicious food I get to stuff myself with doesn’t hurt either!
Day 12: What texture are you grateful for?
Dog hair! Another love of mine that’s not-so-secret is my obsession with our furbabies Lyssa and Levi. I love cuddling with them and petting them and they just make my world a better place.
Day 13: What abilities are you grateful for?
I am grateful for the ability to cook! I’m not a gourmet chef by any means but I can cook a decent meal and I love being in the kitchen. I have started experimenting more and more and I genuinely enjoy cooking. It’s also helpful for us health-wise and financially to eat at home so often. My “ability” to cook is a win for the whole family!
This was a Blue Apron meal from a few weeks ago: Pretzel Burgers with Cheddar Cheese Sauce. Omg it was SO good!
Day 14: What sight are you grateful for today?
I am grateful for the sight of our Christmas tree. After we put up our Christmas decorations over the weekend, I was concerned Levi might find the tree to be an entertaining toy while we were at work and he was unsupervised. I had visions of the Christmas tree being on the floor when I got home and I was so happy to see it standing and in one piece! Good boy Levi!
Well, that wraps up Part 2 of my 30 Days of Gratitude Challenge. This was a more light-hearted post and it was fun to write. It just goes to show that there are so many little things around us to be grateful for!

Your fur babies are so cute! My first husband was a chef, so I almost never cooked anything that didn’t come out of a box. But, when I was single again, I fell in love with cooking. It’s the perfect balance of thinking and action. If I’m following a recipe I don’t have to use too much of my brain, but I’m still doing something valuable. I agree with you, cooking is a wonderful skill to be grateful for!
This week, i’m grateful for all the wonderful comments on my “wish list.” Each warm my heart. I feel so, so lucky.
