Happy Friday!
Can I just say that I am SO glad this week is coming to an end. It was not the best week I’ve ever had. Various things happened in my professional life that really bummed me out and I was feeling pretty down, especially on Tuesday. But then I got home that evening and Chris greeted me with a giant hug and I was instantly reminded that in the big scheme of things, what was bothering me doesn’t matter. It will work itself out. What does matter is that I have a healthy husband greeting me at the door and I am so thankful for that.

It’s from our wedding and I think it just perfectly captures the relationship Chris and I have. Always there for each other, through bad days and good days. Always ready at the door with a hug when the other person needs it. We’ve been through a lot since that picture was taken and this week served as a reminder to me to let the little things go and focus on the positives. I try to do that anyways, but sometimes we all need a reminder. There are lots of positives in my life!
And one of them is that this week was Blue Apron week!
Chris and I were introduced to Blue Apron through some friends last year (thanks Micah and Megan!) and we love it! If you’ve never heard of it, Blue Apron is a meal delivery service that sends recipes and fresh ingredients in the right portions right to your door. You select the meals you want to cook ahead of time (there are 8 options and you can pick 2 or 3) and everything you need shows up at your door in a refrigerated box.
I have loved Blue Apron since the first week we tried it. I love to cook and it’s been so fun to make new recipes that I would typically not choose to make on my own. Chris and I have tried all kinds of different dishes and cuisines over the last year. Most of them have been really good too! There were a few that were just ok, but for the most part the meals have been delicious. Some of them I have even made multiple times. The boxes come with recipe cards and ingredient lists, so you are all set if you want to make the meals again in the future.
We really try to watch our spending (read about that HERE) so Chris and I agreed that we will order one box a month and I look forward to it every month! That’s what I meant earlier in this post when I said that this was Blue Apron week! Three evenings this week I had new, fun dinners to cook.
Here’s what was on the menu:
Pasta and Pork Bolognese
This was a pasta dish that had a Bolognese sauce made with ground pork and brussel sprouts. It was probably my least favorite dish this week, but we still enjoyed it. We just prefer meals with a little more flavor and it was one of the more “boring” meals we’ve had.
Ancho Beef Tacos and Spicy Sweet Potato
Chris and I love tacos. We eat them very regularly in all sorts of forms: shrimp tacos, turkey tacos, fish tacos. So this meal was right up our alley! It was really good and I loved the addition of radishes to the tacos. The sweet potatoes were really good too, even though I accidentally burned them. Oops. The recipe called for adding pickled jalapenos to the sweet potatoes but I chose to leave them on the side. Overall this was a really good dinner and I think we would definitely make it again.
Harissa Baked Chicken
This is a perfect example of a dinner I wouldn’t typically make at home. But it was delicious! This was my favorite meal of the week. The Harissa-baked chicken was really good and I especially loved the farro, collard green, and persimmon salad. So yummy!
Overall Chris and I enjoyed this week’s Blue Apron box. We really like trying new food and this was a fun way to have a date night at home. I definitely needed a date night after the week I had, so this fit the bill perfectly. And nothing cheers me up quite like food does! I am heading into Friday in a better mood and counting down to the weekend!
