Hello and Happy Monday!
I’ve mentioned on my blog a few times how much I love meal planning and meal prepping, and I came up with an idea for a new blog series that I’m going to test out today.
My friends and I talk pretty regularly about the dinners we eat. If the recipes turn out to be really good, then we make sure to share them with each other. So I figured that might be a cool idea for a blog series! I sit down every Saturday morning and plan out what Chris and I are going to eat for the week. This includes breakfast, lunch, and snacks I take to work, as well as dinners every night of the week. I do my best to plan dinners that incorporate any extra food we already have at home, which is a good budget tip.
So like I said, I’m going to test this out today and share my meal plan from last week and add some commentary on how the recipes turned out! First, I will share the food that I took to work with me. Although I’m a creature of habit, so I take basically the same thing every week.
- Breakfast: Red Pepper Egg White Bites
- Morning Snack: Coconut Greek Yogurt with Berries
- Lunch: Zoodles with Marinara Sauce and Greek Chicken
- Snacks: Cheese Stick, Mini Bell Peppers, Rice Cake with Almond Butter
Here are the dinner we had last week:
- Monday: Instant Pot Chicken Adobo
This was a really good dinner! Chris and I both enjoyed it and it was really easy to make. I think the only change I will make next time is to marinade the chicken thighs all day then cook them when I get home from work.
This is my new favorite buffalo chicken recipe. I have made several versions of crockpot buffalo chicken and this one is definitely the best! I added a little bit of cheese, green onions, and ranch dressing on top of my sweet potato and it was delicious! This is a keeper for sure.
- Wednesday: Burgers with Sweet Potato Fries (I turned mine into a burger salad with THIS dressing to avoid extra carbs)
This turned out to be a very good salad! Chris ate his burger on a bun with ketchup, but I am trying to watch my carb intake so I turned my dinner into a cheeseburger salad. It was really good! I topped the lettuce with tomatoes, green onions, the cheeseburger, and a dijon vinaigrette dressing. It was tasty!
- Thursday: Thai Instant Pot Chicken Thighs
I bought a big pack of chicken thighs at the grocery store so I figured I would make another dinner with chicken thighs since we had them in the fridge. These Thai chicken thighs were so good! I loved the sauce and Chris did too. We will definitely be having this one again.
- Friday: Out To Dinner. We usually eat out one night a week for date night. I typically choose Friday night because by the end of the week I am ready to get out of the house and I’m tired of cooking. Win-win!
So, that was our meal plan for last week. All of the dinners were very successful and I will be making them again.
