Hello and Happy Wednesday!
I wrote a freezer meal post several months ago (read it HERE) when we were preparing for Chris’ kidney transplant. It was so helpful in the weeks after his surgery to have dinners already prepped and ready to cook. It took a lot of stress off my plate and allowed me to focus 100% on taking care of Chris as he recovered. It was so helpful for me that I decided to prep some more freezer meals this weekend. I am having an outpatient procedure done today and I’m not sure how I will be feeling afterward, so I figured having some meals on-hand ready to cook would be a good idea. If I don’t feel well, dinner is already taken care of. And If I feel totally fine, one less thing to worry about later in the week! Win-win, right?
I browsed Pinterest for some freezer meals ideas and decided to make these ones:
- Crockpot Meatloaf
- Lemon Pesto Chicken
- Taco Chili
- Teriyaki Dump Chicken
- Beef Enchiladas (I made 2 pans)
AfterI figured out what meals I was going to prep, I made a grocery list and went shopping. I went to Sam’s for the meat since it’s less expensive to buy it in bulk. Then I got the rest of the ingredients at the grocery store.
When I got home, I laid everything out and got to work.
My first step was to brown the ground beef. I needed 1 pound of ground beef for the taco chili and 2 pounds of ground beef for the enchiladas, so I browned 3 pounds total. While the beef cooked, I assembled the Crockpot Meatloaf, which took about 5 minutes. I also assembled the Lemon Pesto Chicken and Teriyaki Chicken. That took about 5 minutes as well.
When the ground beef was cooked, I separated out 1 pound and put it in a freezer Ziploc bag, along with the rest of the ingredients for the Taco Chili. The last step was to assemble the beef enchiladas, which went pretty quickly.
In less than an hour I had 6 freezer meals ready to go!
I am very happy that I can go into my procedure today without worrying about what we’re going to eat for dinner this week. Chris and I rarely eat fast food and I don’t plan to pick up that habit anytime soon. Having homemade dinners ready to go will be a lifesaver!
