Happy Wednesday!
This week has felt super busy so far and we’re only halfway through the week. That’s probably because Chris and I had a really busy weekend celebrating my birthday and then I started a new job on Monday! It’s going to be a really good change for me, both professionally and personally, so I am very excited!
With a new job comes a change in schedule which always feels a little chaotic. I am waking up earlier and trying to get out the door in the morning, commuting to work, meeting new people, learning new tasks, and commuting home. By the time I walk in the door, I am ready to park on the couch for the night.
But there’s this little thing called dinner and I need to eat it! I get hangry (have you heard of this? Hungry + Angry = Hangry) if I don’t eat. So on Monday when I got home later than planned, I was desperate for a simple dinner. I had pork chops in the fridge and I thought a one-dish meal would be perfect. It could bake in the oven while I unwound from the day.
I was inspired by Trisha Yearwood’s Pork Chops and Rice recipe, but I changed it to include ingredients I already had at home. I have to say, this recipe turned out better than I expected! Even my husband approved and he usually doesn’t like rice, so that says something. This recipe couldn’t be simpler to make and you probably already have the ingredients on hand.
Easy Ranch Pork Chops and Rice
Ingredients
- 2 TBS Butter
- 1 Cup Long Grain Rice
- 2-4 Pork Chops
- 14 oz Can Unsalted/Low Sodium Chicken Broth
- 1/4 Cup Water
- 1 1/2 TBS Ranch Seasoning Mix (or 1/2 of a Ranch seasoning packet)
- Salt and Pepper
Preparation
- Preheat oven to 350 degrees. Spray baking dish with non stick spray.
- Melt butter in a saute pan. When melted, add rice and saute for 5 minutes.
- Add the toasted rice to casserole dish.
- Season pork chops on both sides with salt and pepper. Place them in the same saute pan used for the rice.
- Brown for a few minutes on each side.
- Place pork chops in casserole dish on top of rice.
- Combine chicken broth and water.
- Pour over the rice and pork chops.
- Sprinkle with Ranch seasoning.
- Cover with foil and bake for 45 minutes.
- The rice may need more time. If it does, recover with foil and bake for an additional 10-15 minutes.
