Happy Monday!
I’ll be honest and say that I’m not all that happy about it. Mondays can’t be avoided but I certainly don’t look forward to them. Why do the weekends have to go by so fast?
Chris, Lyssa, Levi, and I had a good weekend together. We are hoping this is our last weekend under quarantine, but we’ll see how Chris’ doctor’s appointment goes this week. Notice I said appointment. As in ONE! He is now going once a week instead of three, four, or five times a week. Woo hoo, progress! And he’s continuing to feel good and gain energy, which is the best part. Life is slowly but surely returning to a new normal.
We have learned to make the best of our weekends at home, so I figured I’d do another weekend recap today. We didn’t do anything super exciting, but living a “normal” life is exciting to us and I’m not complaining one bit.
Friday
I was super tired on Friday. I put on pajamas almost as soon as I got home and we chilled the rest of the night. Levi was 100% on board with that plan.
He looks giant in that picture, but this is honestly how he prefers to sleep. He loves to lay completely on top of me and pass out. Goofy dog. Obviously I wasn’t too uncomfortable because shortly after Chris took this picture, I fell asleep too and I didn’t wake up until 1am. Whoops. At least our couch is comfortable!
Saturday
Saturday was a pretty productive day. Since I am allowed to leave the house, I ran several errands. I picked up dog food, which was on sale, woo hoo! I also went to Sams and found some good deals there! They were having a one-day sale on Columbia Coffee K Cups, so I picked up a box of those. 115 K cups for $28. Hard to go wrong with that price.
I also found some awesome jackets for me and Chris. I briefly mentioned in THIS post that we have two trips booked for next year. Well, one of them requires weatherproof jackets which is something we don’t have. Sams happened to have some for a great price, so I snatched them up! And speaking of vacation, we also booked two excursions for our trip over the weekend and we are super excited. I’ll share more in a future post!
Saturday night we stayed in and hung out at home. Shocking, I know. I made dinner and we watched TV and relaxed. It was a good night!
Sunday
Sunday was another productive day, except I was wide awake at 6am unfortunately. It definitely wasn’t because one dog was whining (Levi) and another dog was standing at my side of the bed licking me and wagging her tail (Lyssa). Instead of ignoring them, I decided to get up for the day and be productive and that’s exactly what I did! I had my meal prep for the week done by 8am so that was awesome. I made a new lunch for the week recommended by my friend Kaitlyn: Slow Cooker Moroccan Chickpea and Turkey Stew. I can’t wait to try it.
My dad was in the area so he stopped by to have lunch with us and that was nice. Always good to see family! That afternoon I was in a baking mood and we had a random ripe banana that I wanted to use, so I decided to make this pumpkin banana bread.
It is so good! Chris and I both ate two slices so I have a feeling the loaf isn’t going to last long in our house. I may have to make another one!
I have been craving Tex Mex lately, which shouldn’t come as a surprise if you’ve been following my blog for awhile. It’s my favorite food and I would eat it all the time if I could. To satisfy my craving, I tried a new recipe for dinner on Sunday: Chicken and Black Bean Green Enchilada Rice Bake.
It was tasty! And it was easy too, so I will definitely be making this dinner again in the future. The rest of the night we just relaxed with the puppies and enjoyed what was left of the weekend. It definitely went by too fast.
